Monkey Tree Restaurants and BistrosMonkey Tree is a new brand of family restaurant. Following their acquisition of about 500 Whitbread sites, the Client (Mitchells and Butlers) reallocated the properties within their own portfolio, some of which have been opened as Monkey Tree Restaurants and Bistros. The scheme was piloted with a single refurbishment of an existing restaurant in Nuneaton; subsequently, further restaurants have been opened across the West Midlands area. Ridge was initially involved in the appointment of a designer, which was done through competition. Ridge was responsible for co-ordinating all direct orders including all consultants orders. Value engineering was required throughout and all restaurants were opened on time as complete.
